Vanilla Spiced Shortbread Biscuits


Christmas is just around the corner - can you believe it! I found this amazing shortbread recipe a few weeks ago which is a great Christmas treat and alternative if you aren't a fan of gingerbread. It's quite simple to make and took me about 90 minutes - but I'm a complete dunce when it comes to the kitchen. Best of all, it only consists of six ingredients which you probably have sitting in your kitchen pantry. I got 23 biscuits out of the dough but how many you get will depend on the size of your cookie cutter.

125g Butter
1/4 + Half 1/4 Cup Icing Sugar
1 Teaspoon Vanilla Essence
1 Cup Plain Flour
1/2 Teaspoon Cinnamon or All Spice
Half 1/4 Cup Raw Sugar


  • Preheat oven to 180 degrees Celsius (160 fan-forced) and line two baking trays with non-stick baking paper
  • Combine butter, icing sugar and vanilla essence using electric beaters until pale and creamy
  • Using a wooden spoon, stir in flour and and cinnamon until the mixture forms a dough
  • On a lightly floured bench top, gently knead dough
  • Mould into disc shape, cover with plastic wrap and place in fridge for 15 minutes
  • On a lightly floured surface, roll dough until 5mm thick - alternatively, roll between two sheets of baking paper
  • Cut the dough with the cookie cutter shape of choice and place on lined trays
  • Place in freezer for 15 minutes to chill
  • Sprinkle biscuits with sugar and bake for approximately 15 minutes or until lightly golden
  • Set aside tray for 5 minutes and then transfer to wire rack
